She sneaks out of the bedroom to steal the remainder of the cookies from their resting spot buried on the back on the sofa. No I’m not kidding, she snuck out of the bedroom in the dead of night to steal the cookies and demolish them leaving just scraps of the plastic bag in which they were stored.
Sangria is quite pleased with herself, her guilty smile this morning gave her away. She is currently curled up at my feet, sleeping off her midnight guilty pleasure.
A Taste of Fall Cookies
|1 16oz can of Pumpkin Puree||1 tsp. Vanilla|
|2 tsp. Baking Powder||1 tsp. Baking Soda|
|1 tbsp. Cinnamon||1 tsp. Ginger|
|1 tsp. Nutmeg||1 egg|
|10 oz. bag of Fresh Cranberries||2 1/4 cups AP Flour|
|2 tbsp. orange zest||Juice of Half an Orange|
|1/2 cup packed brown sugar||1/2 cup sugar|
|1/2 tsp. salt||1/2 of melted butter, no salt|
|2-3 tbsp. powdered sugar||1/2 tsp. orange zest|
|1 tsp. orange juice|
Preheat oven to 350 degrees.
Cream sugars and egg until smooth. Add vanilla and spices and combine with the remainder of the wet ingredients, except the cranberries and the last three ingredients.
Add the dry ingredients.
Combine the cranberries by hand.
Bake until cookies come out golden brown.
After cookies have cooled, they can be glazed.
- Combine the remaining ingredients in a small bowl until smooth. *More or less liquid may be needed depending on the weather that day.
- Drizzle over cookies.
Tips and Tricks
Cookies do not spread like most cookies, so drop cookies will retain the shape they are dropped in.
I found that the cookies are better in a 13×9 pan.
I added a couple of handfuls of cashews broken up from the mixed nuts stash. Add the nut of your choice however.
Dried cranberries mixed with fresh cranberries will add additional texture to the cookies.
Pumpkin Pie Spice mix can be substituted for the spices in the recipe, your quantity will vary depending on your pallet. My family prefers spicier cookies so your preference may be for less spice.
The cookies aren’t super sweet but they can easily accommodate slightly more sugar to sweeten them to your preference.
These cookies do not last long, I highly recommend doubling the batch. The amount of cranberries in a doubled batch will vary based on your families preference for the tart berry. Fresh cranberries are easily located in grocery stores this time of year and freeze incredibly well for use throughout the year. Which reminds me, I need to stock up on fresh cranberries for the year.
